The Woodbridge appellation in California’s Central Valley has established itself for producing distinctive, consistently excellent Cabernet. Lodi Ranch 11 Cabernet Sauvignon is the hearty red wine classic that lovers of fine Cabernet hunt down with passionate zeal – the king of red grapes in all its splendid glory.

Oak and tannins, pepper and spice combine to enhance trademark blackcurrant and cherry flavors. Rich fruit and complex structure dazzle from first aroma to long, refined finish.

Food pairings: Flavorful beef dishes including steak and roasts. Also spareribs and lamb. Game dishes including pheasant and venison, firm cheeses such as cheddar and hard cheeses such as parmigiano and romano.

Aging: Recommended minimum aging of four months to mellow the tannins and allow full complexity to develop. Ideal after two years.

Review Comments: Had this wine sitting in the carboy for weeks with patience and bottled today. The wine shop told me to leave it in the bottle for at least a year to mature. I have tasted some of it and its simply not worth the angst of waiting 12 months to savour this delectable brew. I can't see it lasting until Christmas.

Review Comments: I bottled this wine 2 days ago, followed the directions exactly, except I left out the potassium sorbate. I know it isn't technically ready yet, but goodness gracious does it taste good for a new wine! It has a wonderful oak presence that gives it a nice vanilla note. Enough tannin for a cab sav, but not too much. An overall very smooth wine.
